Executive Chef

British born Kevin Cape has a background of 25 years in hospitality industry, starting his career as a Chef at the age of 16. After completing his apprenticeship, Kevin moved to London to join the Portman Hotel under the guidance of Chef Felix Muntwyler.

After sometime with Felix, he gained more experience working with the legendary Chef Monsieur Bourdin. This inspired Kevin’s culinary thirst, pushing himself to the limit. He became a Chef de Partie at the age of 21.

After a short working trip to the USA, Kevin returned to the Connaught Hotel in London and at 27, he was promoted as the first British Executive Sous Chef and the youngest at the Connaught Hotel. He broadened his skills working for a period of time in France and also entered many competitions representing his country. He then decided to branch out and was appointed as Executive Chef at the Bell Inn, Aston Clinton, (Relais et Chateaux, Tradition et Qualite).

During his stay at the Bell Inn, he expanded his research in Asian Cuisine and become well noted for his style. After many visits to Asia, his knowledge on Asian Cuisine became comprehensive. He moved  to the Tarnhouse Hotel as an Executive Chef, winning acculates for his  European & Asian infusion.

He was then appointed as an Executive Chef for the Eastern & Oriental Express, Singapore.

This luxury train in Asia’s most exclusive travel experience operating between Singapore and Bangkok in the tradition of legendary Venice Simplon-Orient-Express. Kevin has been with E & O since it entered service in 1993, has created his own style of cuisine for the train, achieving very high standards, critically acclaimed by guests, and food and travel writers from around the world.

Developing and branding a unique style of cuisine on board has been necessary for the multi-national travellers. He has used skills from all parts of Asia and Europe, making the Eastern & Oriental cuisine a unique product.

One of Asia's most respected chefs, Kevin’s activities also include being Chef Consultant for Orient Express’s, “The Road to Mandalay” cruise ship, which travels between Mandalay & Pagan in Myanmar (Burma).
