Troy’s culinary training was in Modern Australian Cuisine and finished his apprenticeship in Queensland, Australia. Since then Troy has held various positions in the Whitsunday Islands, Central Queensland & Western Australian regions. Troy’s first management position was as Sous Chef of Long Island Resort. A 4 Star resort located on the Great Barrier Reef. It was here that Troy juggled the pressures of a remote location whilst preparing first class meals. His next challenge was on the other side of the country, working for the 5 Star Hilton Hotel, Perth. It was here that he worked under the International & Award winning Chef Gerda Elts. Moving back to Queensland, Sous Chef of Great Keppel Island Resort was the next position for Troy. It was here that Troy made a name for himself working with Benjamin Christie to redevelop the catering operation of the remote Resort. From Sunny Queensland, Troy went once again West to Perth to work for the Sheraton in the Fine Dining Restaurant, Origins. Working with Asian trained Chefs, Origins had unique & innovative flavours on the menu. Origins is a popular venue for Wine launches & dinners After finishing at Origins, Troy teamed up with Benjamin Christie once again to re-open the new Boutique Parkroyal Hotel & its new restaurant GUSTI. The restaurant soon became very popular, and had a reputation for Innovative & Creative Meals. The menu was Modern Australian & was changed every few months capturing the quality of the seasonal produce of the region Troy had teamed up with Benjamin Christie to start the business called Chefs Unlimited. Chefs Unlimited is an internet based business specialising in providing Hotels & Restaurants around the world a range of services including Global Chef Recruitment, International Guest Chefs, Hotel & Restaurant Promotions & Restaurant Marketing. Troy has since become the sole Owner and Director of the Global Chef Company, Chefs Unlimited and continues to provide Restaurant & Culinary consulting to various restaurants & kitchens throughout the Asia-Pacific region.
